Alsace Butter Cookie
Alsace butter cookies are perfect with a cup of tea or coffee. Their buttery goodness just melts in my mouth. Yum! You can enjoy a taste of the Alsace Lorraine without ever leaving home.
Ingredients
- 3 ¾ cup all purpose flour
- pinch of salt
- ½ pound unsalted butter, softened
- 1 ¼ cups vanilla sugar (vanilla sugar: Into a jar that seals tightly pour 2 cups of sugar and add seeds scraped from 1 vanilla bean pod plus the pod itself – buried in the sugar. Seal tightly and let stand one week before use.)
- 4 large egg yolks
- 1 large egg
Glaze Ingredients
- 1 large egg yolk + 1 teaspoon water beaten together
- 6 tablespoons vanilla sugar + ½ teaspoon ground cinnamon mixed together
Directions
Sift together flour and salt.
In a large bowl beat butter and sugar until smooth (color will be pale yellow). Add the eggs yolks one at a time, beating until mixed thoroughly. Finally, add the whole egg, again mixing thoroughly.
Mix in flour/salt until the dough is smooth.
Divide dough into fourths, flatten each into a disk, wrap in foil or plastic wrap and refrigerate overnight.
Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
Lightly dust your preparation surface with powdered (confectioner’s sugar) and roll dough to 1/8 inch thickness. Cut into star shapes, paint with egg yolk glaze mixture and sprinkle with the cinnamon sugar.
Bake until a pale golden color (about 15 min). Cool on wire rack and repeat with remaining dough.
