Soup au Poulet de Maman – Mama’s Chicken soup

Soup au Poulet de Maman or Mama’s Chicken soup makes a quick easy satisfying meal after a long day at work or a brisk hike. Pair this with a crusty whole grain bread to round out the meal.

Ingredients for Soup au Poulet de Maman

  • 8 cups fat free chicken broth
  • 2 skin-free bone-free chicken breasts
  • 1 cup diced onion
  • 4 ounces thinly sliced button mushrooms
  • 1 teaspoon olive oil
  • 6 ounces (about 200g) thin whole wheat noodles
  • 3 carrots, peeled and diced into small cubes
  • 1 cup frozen petite peas
  • 1/4 teaspoon red pepper flakes
  • 1 heaping teaspoon dried thyme (or 1 heaping tablespoon fresh thyme)
  • 3/4 teaspoon poultry seasoning
  • fresh ground pepper and salt to taste

Directions

  • Bring chicken broth to a boil, add onions and chicken, cover and simmer for 20 minutes. Remove chicken and dice when cool.
  • Saute sliced mushrooms in olive oil.
  • Return broth to a boil and add noodles. During the last 5 minutes of cooking time for noodles, add peas and carrots. Add seasonings, diced chicken and mushrooms, heat through and serve with a crusty bread.
